The secret of Chablis
lies deep in the soil. Prehistoric fossilised seashells give the local Kimmeridgian limestone its distinctive character. Here, the Chardonnay grape develops the steely, mineral strength that is so characteristic of Chablis. Michel Laroche is the fifth generation of his family to continue a tradition lasting over eleven centuries - one of allowing the wine to express its unique origin:
